Uniform Slicing: Berries are sliced to a consistent 5–8 mm thickness. This ensures every piece dries evenly and at the same rate.

Stage 2: The Gentle Drying Process
Our freeze-drying process is a carefully managed, three-stage journey that locks in quality.
Freezing: The strawberries are rapidly frozen to -40°C (-40°F). This solidifies the water inside and preserves the fruit’s natural cellular structure.
Primary Drying (Sublimation): Under a deep vacuum, gentle heat is applied. This turns the frozen water directly into vapor (skipping the liquid phase), removing the bulk of the moisture without damaging the strawberry’s delicate shape and nutrients.
Final Drying (Desorption): We gradually increase the temperature to gently remove any remaining trapped water. This brings the final moisture content down to a stable 3-5%, ensuring a crisp texture and long shelf life.
